My Oreo Chicken Burger Experiment
I knew the most important part of this experiment would be preventing the Oreo flavour from overpowering the chicken.
The first temptation is to add lots of cookie crumbs, but this makes the burger unnecessarily sweet. A light sprinkling works much better. It gives you a recognisable Oreo flavour while allowing the seasoned chicken and creamy potatoes to remain the main components.

How to Make Black Oreo-Style Burger Buns
1. Activate the yeast
Combine the warm milk, sugar and yeast in a large bowl. Leave the mixture for approximately 5 minutes, or until it begins to look slightly foamy.
The milk should feel warm rather than hot. Excessive heat can prevent the yeast from working.
2. Make the dough
Add the egg, melted butter, flour, black cocoa powder, salt and optional black food colouring.
Mix until a shaggy dough forms. Knead it for approximately 8–10 minutes by hand, or 6–7 minutes using a stand mixer fitted with a dough hook.
The dough should become smooth, soft and slightly tacky. Add additional flour one tablespoon at a time only if it remains excessively sticky.
3. Allow the dough to rise
Place the dough in a lightly greased bowl and cover it with a clean kitchen towel. Leave it in a warm place for approximately 60–90 minutes, or until doubled in size.
4. Shape the buns
Divide the dough into four equal portions. Shape each piece into a smooth ball and gently flatten it into a burger-bun shape.
Arrange the buns on a parchment-lined baking sheet, leaving space between them. Cover and allow them to rise for another 30–40 minutes.
5. Bake
Preheat the oven to 375°F.
Brush the buns lightly with the egg wash. Bake for 15–18 minutes, or until risen and cooked through.
Brush the warm buns with melted butter and allow them to cool before slicing.
How to Make the Crispy Chicken
1. Marinate the chicken
Place the chicken thighs between two sheets of parchment paper and lightly pound them until they are an even thickness.
Combine the buttermilk and hot sauce in a bowl. Add the chicken, cover and refrigerate for at least 1 hour. For the best flavour and tenderness, marinate it for up to 8 hours.
2. Prepare the coating
In a shallow dish, combine:
- Flour
- Cornstarch
- Paprika
- Garlic powder
- Onion powder
- Salt
- Black pepper
- Oregano
- Thyme
- White pepper
Remove each chicken thigh from the buttermilk and allow the excess liquid to drip away. Press it firmly into the seasoned flour mixture until thoroughly coated.
For a rougher, crunchier coating, drizzle two tablespoons of the buttermilk marinade into the flour and rub it between your fingers before coating the chicken.
3. Fry the chicken
Pour approximately 1½ inches of oil into a deep, heavy-bottomed skillet. Heat the oil to 350°F.
Carefully add the chicken and fry for approximately 5–7 minutes per side, depending on its thickness. The exterior should be crisp and golden, and the centre must reach 165°F.

The Shortcut Version
If you don’t want to make buns from scratch, use soft brioche burger buns.

They won’t be black throughout like homemade cocoa buns, but they will create a similar appearance for considerably less work.

Don’t add too many Oreos
One cookie per burger is sufficient. Too many crumbs can dominate the savoury flavours and make the burger overly sweet.
Use chicken thighs
Boneless chicken thighs are juicy, flavoursome and closer to the chicken reportedly used in the original Chinese burger. Chicken breast can be substituted if preferred.
Keep the potatoes thick
Loose mashed potatoes will escape as soon as you bite into the burger. Use only enough milk to create a smooth, spreadable consistency.
Use black cocoa if possible
Black cocoa has the characteristic dark colour and bittersweet flavour associated with Oreo wafers. Dutch-processed cocoa is the next-best substitute.
Assemble immediately before serving
The hot chicken and mashed potatoes will eventually soften the crispy coating. Assemble each burger only when you’re ready to eat it.
What Does an Oreo Chicken Burger Taste Like?
This homemade version begins with the familiar savoury flavours of crispy fried chicken, pepper, garlic and creamy mashed potatoes. The black cocoa bun adds a mild bittersweet note, followed by a little sweetness and crunch from the Oreo crumbs.
It doesn’t taste like chicken covered in chocolate sauce. When the cookie crumbs are used sparingly, the overall effect is closer to a sweet-and-salty chicken sandwich with an Oreo finish.
