The first thing that caught my attention about Taco Bell’s new Gordita Crunch Duos wasn’t actually the filling. It was the idea of squeezing everything people love about a Cheesy Gordita Crunch into a smaller, snackable taco.
So naturally, I wanted to see whether I could make them at home.
These Taco Bell Gordita Crunch Duos Copycat tacos have all the important layers: warm pillowy flatbread, melted three-cheese blend, a crunchy corn taco shell, seasoned chicken, smoky chipotle sauce, shredded lettuce and fresh pico de gallo.
The combination is what makes them so good. You get a soft exterior and crunchy center in the same bite, followed by melted cheese, juicy chicken and that creamy chipotle finish.
And unlike many copycat recipes we’re recreating years after they became popular, this one is brand new.
What Are Taco Bell Gordita Crunch Duos?
Taco Bell introduced Gordita Crunch Duos nationwide on September 17, 2026, as a limited-time menu item inspired by its long-running Cheesy Gordita Crunch. Each order contains two snack-sized gorditas. Taco Bell
The official version starts with warm flatbread covered with a blend of mozzarella, pepper jack and cheddar. That’s wrapped around a freshly fried white-corn taco shell.
Inside, you can choose grilled marinated steak or slow-roasted chicken, followed by creamy chipotle sauce, lettuce and freshly prepared pico de gallo.
That gives us a pretty clear roadmap for making our homemade version.

Ingredients You’ll Need
For the chicken:
- 1 lb boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- ½ teaspoon ground cumin
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon lime juice
For the gorditas:
- 8 small soft flatbreads or flour gordita-style tortillas
- 8 crunchy corn taco shells
- ¾ cup shredded cheddar cheese
- ½ cup shredded mozzarella
- ½ cup shredded pepper jack
- 2 cups finely shredded iceberg lettuce
- 1 cup pico de gallo
For the creamy chipotle sauce:
- ½ cup mayonnaise
- ¼ cup sour cream
- 1–2 chipotle peppers in adobo
- 1 teaspoon adobo sauce
- ½ teaspoon garlic powder
- 1 teaspoon lime juice
- Pinch of salt
The Trick Is Getting the Two Shells to Become One
This is the part that matters most.
Don’t simply put a crunchy taco inside a piece of flatbread. The melted cheese needs to act almost like glue between the two shells.
Mix the cheddar, mozzarella and pepper jack together. Sprinkle it generously over one side of the warm flatbread and heat just until melted.
Immediately wrap the cheesy side around the crunchy taco shell and gently press.
As the cheese cools slightly, it holds the crunchy shell in place.
It’s a small detail, but it creates that soft-cheesy-crunchy texture that makes this taco different from an ordinary crunchy taco.
How to Make Taco Bell Gordita Crunch Duos
1. Season the Chicken
Cut the chicken into small strips or bite-sized pieces.
Combine the olive oil, chili powder, paprika, cumin, garlic powder, onion powder, salt, pepper and lime juice.
Add the chicken and toss until thoroughly coated. If you have time, leave it for about 20–30 minutes.
2. Cook the Chicken
Heat a large skillet over medium-high heat.
Add the chicken and cook for approximately 6–8 minutes, turning occasionally, until browned around the edges and completely cooked through.
Chicken should reach an internal temperature of 165°F (74°C).
Remove it from the heat and keep warm.
3. Make the Chipotle Sauce
Add the mayonnaise, sour cream, chipotle pepper, adobo sauce, garlic powder, lime juice and salt to a small blender or food processor.
Blend until completely smooth.
Taste before adding another chipotle pepper. One gives you plenty of smoky flavor without making the sauce overwhelmingly hot.
4. Prepare the Cheese Layer
Combine the cheddar, mozzarella and pepper jack.
Warm the flatbreads in a skillet for about 20–30 seconds per side.
Place approximately 3 tablespoons of cheese over each warm flatbread. Heat briefly until the cheese begins melting.
5. Add the Crunchy Shell
Place one crunchy corn taco shell in the center of each cheesy flatbread.
Fold the flatbread around the shell and gently press so the melted cheese sticks the two layers together.
6. Fill Your Gordita Crunch
Divide the chicken between the taco shells.
Add creamy chipotle sauce, shredded iceberg lettuce and pico de gallo.
Serve immediately while the outside is still warm and the inside shell is crunchy.

Chicken or Steak?
You can easily make the other version of the Taco Bell Gordita Crunch Duos Copycat without changing the rest of the recipe.
Replace the chicken with about 1 pound of thinly sliced steak. Flank steak or sirloin works particularly well. Use the same seasoning mixture, sear it quickly in a very hot skillet and slice it into small pieces before filling the tacos.
Taco Bell currently sells both steak and slow-roasted chicken versions.
The Strange Story Behind One of Taco Bell’s Most Famous Ads
Here’s a piece of Taco Bell history that is considerably stranger than the usual “where did the restaurant get its name?” trivia.
Anyone who remembers Taco Bell in the late 1990s probably remembers the tiny Chihuahua featured in its hugely recognizable advertising campaign.
But the character eventually became the subject of a major lawsuit.
Two creators behind a concept called “Psycho Chihuahua” had previously presented their character to Taco Bell. After Taco Bell’s Chihuahua campaign appeared, their company, Wrench LLC, sued. A jury later found that Taco Bell had breached an implied contract and awarded the plaintiffs more than $30 million, with subsequent proceedings bringing the dispute above $40 million. Taco Bell disputed that the advertising character came from the plaintiffs’ concept and pursued claims involving its advertising agency.
It’s a surprisingly complicated backstory for one of fast food’s most memorable advertising mascots.

And Where Did the Name Taco Bell Come From?
That story is much simpler: Bell was the founder’s surname.

These are quite filling on their own, but they’re even better with something on the side.

For the Chicken

Instructions
- Cut the chicken into small strips or bite-sized pieces.
- Add the chicken to a bowl with olive oil, chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, pepper and lime juice. Toss until evenly coated.
- Heat a large skillet over medium-high heat. Cook the chicken for 6–8 minutes, stirring occasionally, until browned and the internal temperature reaches 165°F (74°C). Remove from the heat.
- Make the chipotle sauce by blending mayonnaise, sour cream, chipotle pepper, adobo sauce, garlic powder, lime juice and salt until smooth.
- Combine the cheddar, mozzarella and pepper jack cheeses in a bowl.
- Warm each flatbread in a skillet for 20–30 seconds. Sprinkle approximately 3 tablespoons of the cheese mixture over one side and heat until melted.
- Place a crunchy taco shell over the melted cheese. Fold the warm flatbread around the crunchy shell and press gently so the melted cheese holds the layers together.
- Fill each shell with seasoned chicken.
- Drizzle with creamy chipotle sauce and top with shredded lettuce and pico de gallo.
- Serve immediately while the inner taco shell is still crisp.
Notes
Steak version: Replace the chicken with 1 lb sirloin or flank steak cut into thin strips.
Shortcut: Store-bought pico de gallo works perfectly here.
For extra crunch: Don't assemble the gorditas until you're ready to eat. Once sauce and pico sit against the corn shell, it will gradually soften.
Less spicy: Use only the adobo sauce rather than the whole chipotle pepper.
Cheese: The mozzarella, pepper jack and cheddar combination isn't random — Taco Bell says the restaurant version uses a three-cheese blend containing those cheeses.
